GARLIC BACON SAUTÉED GREEN BEANS WITH ROASTED MUSHROOMS
3/4 cup frozen green beans
1/2 med Onion Diced
4 Medium Mushrooms 1/4 diced & roasted
1/4 cup diced Red Pepper
1 clove fresh garlic chopped
1 Tbsp Olive Oil
1 Tbsp Butter
1/3 tsp Fresh Lemon Juice
1 Tbsp White Wine
3 Strips of Bacon crumbled cooked bacon
3/4 pinch lemon-pepper seasoning
3/4 pinch seasoned salt
3/4 pinch ground butchers black pepper
Get a pot to soft boil and salt. Blanch beans, set aside.
On another burner, get a sauté pan heating up.
Get Veggies diced up and set aside.
Now rough chop the bacon slices and get them into the hot pan reduce heat to 6 and continue to cook off bacon, making sure not to overcook it.
Now, some people like to keep the bacon fat in the cook, others drain it, your choice. I always leave it in unless it is very fatty bacon. Retaining a good tbsp is how I roll. In that fat I throw in the other veggies and render. Now add Olive Oil, Butter Lemon Juice and Wine (in that order). Add bacon back into and simmer slowly. add seasonings, simmer off and add blanched beans, finish on low 8 minutes.
Hold time is 15 to 20 on these babies!
