2 large potatoes
1 medium onion
small bunch of parsley
1 tsp garlic powder
salt and pepper to taste
1 tblsp olive oil
1 tblsp of flour
Cooking Instructions
This recipe is designed for 2 servings.
Peel and fine grate Potato, squeeze out all the water.
Peel and fine grate the onion and add to the potato
rough chop parsley and add to mixture.
add remaining ingredients and mix well.
In a fry pan over medium heat, add a small amount of cooking oil. Add a dollop of mixture into pan and flatten as best as possible. Cook until golden brown and flip, cook this side to golden brown. Pancakes can be held in a warming over 180 degrees.
Serve with Sour Creme, cottage cheese or both. Also great with Apple Sauce.
